The chickpea is made weekly and always available fresh. The other varieties are made periodically (catch them when you can)!
For shipping, we freeze our tempeh to insure that it arrives fresh (depending on the shipping location and weather, it may arrive partially defrosted/ready to cook). It can be re-frozen but the texture will be more crumbly. 
The minimum to order is four 1-pound bricks, which are $10 each, or two 3.5 pound slabs, which are $28 each. The shipping varies depending on the location but is usually about $12 additional. The shelf life of the fresh or defrosted tempeh is 7 days, at which point it can be frozen in freezer bags for up to one year.
