Fresh tempeh lasts for 7-10 days in the fridge. It can be frozen for up to a year; if so, we recommend double or triple layering freezer bags or cutting it and putting it into mason jars to protect it from freezer burn. It also freezes very well in a marinade.
Once defrosted, the shelf life is about 5 days. It can be re-frozen, but the texture will be more crumbly, suitable for a ground meat substitute (think meatballs, Bolognese, etc.)!
